"Area: San Marzano, Salento, Puglia. At about 100 meters above sea level.
Soil: Medium clay texture, shallow and with good skeletal soil.
Farming type: Espalier (5,000 vines per hectare).
Grape harvest: Second week of September.
Vinification: Thermo-controlled maceration for about 10 days, followed by alcoholic fermentation with selected yeasts.
Ageing: In French and American oak barriques for 6 months.
Tasting notes: Ruby red colur enriched with violet hues; opulent bouquet, which hints at ripe cherries and plums, with pleasant notes of cocoa and vanilla; a wine with a remarkable structure, softened by the soothing warmth of the Primitivo grape; the finish offers notes of persistent sweetness.
Best served with: Rich first courses, lamb, game with elaborate sauces and hard cheese.
